MERLOT & CABERNET SAUVIGNON

Harvest

Manual harvest in October with two passes. Grape selection on a conveyor belt with an optical selector.

0.75L | 1.5L  |  3L

San Leopoldo Cabernet Merlot, with Merlot and Cabernet grapes selected and harvested by hand, then vinified through a temperature-controlled fermentation of 20 days in stainless steel tanks with indigenous yeasts.

This is followed by a long period of ageing in oak barriques and then refinement in the bottle.


Vinification

Spontaneous fermentation for 20 days in controlled temperatures in stainless steel tanks (50- and 70-hectoliter). Use of ‘submerged cap’ method. Malolactic fermentation in stainless steel at controlled temperatures.

 

Soil

Cretaceous period, characterized by argillite and fine, marly limestone.

 

Vineyard

Spinaie, Cinigiano (GR) Altitude: 340 m. above sea level

Exposure

With a north-south exposure due to the slope of the land, the vineyard is situated on the slopes of Monte Amiata, overlooking the Maremma, with a significant night/day temperature range and ventilation that keeps the grapes healthy and an average rainfall that helps bring the grapes to optimal ripeness without incurring water stress.

Tasting notes

Hints of ripe black and red fruits, such as blackcurrant and black cherry, along with herbaceous nuances like black pepper. Meanwhile, the Merlot contributes a velvety texture, introducing notes of red and black fruit and a subtle hint of vanilla. Grilled steak, braised lamb, mushrooms and dark chocolate.
