100% CABERNET FRANC

Harvest

Harvest takes place manually in October. In the winery, grape sorting is carried out on a conveyor with an optical sorter for berry selection.

Made from 100% Cabernet Franc grapes, it is harvested by hand in October, followed by a selection of the berries in the cellar. The vinification takes place in temperature-controlled tanks, using the “submerged cap” method, with malolactic fermentation in stainless steel. The wine is aged for 12 months in American oak tonneaux and barriques, followed by 18 months of bottle aging. A wine with great versatility, ideal with meat dishes, game, or aged cheeses.


Vinification

Fermentation occurs in temperature-controlled stainless steel tanks (50 and 70 hectoliters), using the submerged cap method. This is followed by malolactic fermentation, also in stainless steel and at controlled temperatures. The wine then ages for 12 months in American oak tonneaux and barriques, followed by 18 months of bottle refinement.

Soil

Geologically, the soils belong to the Cretaceous period (a very ancient geological formation) characterized by fine marl and limestone interspersed with clay shale. Often referred to as galestro, these soils have a good texture and stony structure, which ensures excellent drainage and promotes deep root development. There are also clay-sandy soils with pebbly skeletons.
 Both soil types yield different results in the wine, but each contributes positively to overall wine quality.

 

Vineyard

Planted in 2018, with a vine spacing of 270x100 cm and a density of 3,700 vines per hectare. The training system is a modified Guyot (double arched cane). The vineyard sits at an altitude of 340 meters above sea level.

Exposure

The vineyard has a north-south exposure due to the natural slope of the terrain, which provides significant day-night temperature variation and good ventilation—factors that keep the grape clusters healthy. Moderate rainfall supports optimal ripening of the grapes without causing water stress.

Cabernet Franc is an extremely versatile wine, ideal with both vegetarian and meat-based dishes. Red Meat & Game – Grilled steak, lamb chops, braised beef, venison. Poultry & Pork – Roast duck, peppered pork tenderloin. Vegetarian & Cheese – Mushroom risotto, roasted eggplant, aged cheddar, Gruyère. Thanks to its fruit, spice, and structure, it pairs beautifully with a wide range of flavors.
